Vegan Pumpkin Spice Latte Cookies

Ingredients

  • 1/2 cup vegan butter
  • 1 egg replacer
  • 1 tsp vanilla extract
  • 1/2 cup coconut sigar (packed)
  • 1/4 cup maple syrup
  • 1 1/2 cup all purpose flour
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup Nestle Pumpkin Spice Latte Morsels

Instructions

  • Preheat to 350 F° and prepare two baking sheets with pachment paper.
  • Melt your vegan butter and add to a medium bowl.
  • Next add your egg replacer, vanilla extract, maple syrup and coconut sugar.
  • Then, add in the flour, pumpkin pie spice, salt, and baking soda. Make sure to add the flour first and then add the other ingredients on top.
  • Then, fold in ½ cup of the chips using a spoon or spatula until evenly distributed.
  • Ad to the oven and bake for 10-12 minutes until edges are beginning to brown, but center is still soft yet no longer glossy.
