Vegan Fudge Brownies

Ingredients

  • 1 cup almond milk
  • 1/3 cup melted coconut oil
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla
  • 1/2 cup applesauce
  • 1 1/2 cups flour (can use all purpose flour) I did 3/4 cup all-purpose flour & 3/4 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cups coconut sugar
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 1/2 cup chocolate

Instructions

  • Preheat oven to 350F and line a 9x9 pan with parchemnt paper. IF you want your brownies to come thicker and maybe eevenmore cake like, use an 8 x 8 pan
  • In a medium bowl, mix almond milk, melted coconut oil, apple sauce and vanilla extract.
  • Measur your cocoa powder and pour into your liquid mixture.
  • Next, gather your flours in a measuring cup. Add your baking powder, baking soda, and salt, and sift it into your liquid mixture.
  • Stir together with a wooden spoon or rubber spatula.
  • Add in 1 cup of your chocolate morsels.
  • Pour your batter into a parchment lined pan. Set aside, and in a double boiler melted 1/2 cup of chcooalte morsels.
  • Dollop the melted chocolate around the surface of the brownie batter. With a toothpick, swirl the chocolate around the brownie mix.
  • Bake in preheated oven for 20-22 minutes. Let sit for 30 minutes before cutting in!
  • You can melt a little bit extra chocolate on top for fun! Enjoy!
