Vegan Chocolate Chip Pancakes

Ingredients

  • 1 cup dairy-free milk
  • 2 tbsp coconut sugar
  • 1/2 tsp vanilla extract
  • 1 cup flour
  • 1 tbsp baking powder
  • 1 tbsp vegan butter
  • 3/4 cup dairy-free chocolate chips

Instructions

  • In a large mixing bowl, whisk together the flour, baking powder, and sweetener.
  • Add the melted butter, milk, and vanilla to the bowl and mix together to form a mostly smooth, slightly thick pancake batter. Do not over mix.
  • Gently fold in the chocolate chips.
  • Heat a greased skillet over medium-high heat and drop ΒΌ cup of batter down for each pancake.
  • Serve and top your pancakes to your liking!
