Vegan Apple Pancakes

Ingredients

  • 1 cup flour
  • 1 cup almond milk
  • 2 tbsp maple syrup
  • 1 tbsp melted vegan butter
  • 1/2 cup shredded apples
  • 1 tsp vanilla extract
  • 1/2 tbsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp all spice
  • 1 tbsp baking powder

Caramelized Apples

  • 2 small apples
  • 1 tbsp maple syrup
  • 1 tbsp coconut oil
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla extract

Instructions

  • Combine all of the pancake ingredients in a large bowl.
  • Grease your pan with coconut oil and add about 1/4 cup of batter to the pan. Cook for a few minutes and flip.

Caramelized Apples

  • Chop the apples into small pieces
  • Add the coconut oil, maple, cinnamon, and vanilla. Mix them well and then add the sliced apples.
  • Once it thickens, about 10 minutes, you can take it off your stove top.
  • Add the apples to your pancakes stack and enjoy!
