In a medium or large bowl, add your sugars and softened butter. Cream together until a fluffy texture forms. Add in the egg and vanilla extract. Mix well.
In a separate bowl, mix together the flour, salt and baking soda. Mix half the dry ingredients into the wet until everything comes together. Slowly add in the remaining flour a little bit at a time.
Fold in the chocolate and the crushed ritz crackers. Do not overmix.
Use a 1 ounce cookie scoop and roll the dough into balls. You can refrigerate the dough for a half hour if you want or get baking right away.
Preheat the oven to 350F and line a cookie sheet with parchment paper. Place the chilled cookie dough balls on the sheet.
Bake for 11 minutes or until the edges are just golden brown and the centers are still a bit gooey.
