Red Velvet Mug Cake

Ingredients

  • 4 tbsp all purpose flour
  • 2 tbsp granulated sugar
  • 1/2 tbsp unsweetened cocoa powder
  • 1/4 tsp baking powder
  • 1 tbsp melted butter
  • 3 tbsp buttermilk or sour cream
  • 1/2 tsp vanilla extract
  • 1 tsp red food coloring
  • pinch of salt
  • cream cheese frosting optional

Instructions

  • Mix the Dry Ingredients: In a microwave-safe mug, combine the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, and a pinch of salt. Mix well to ensure there are no lumps.
  • Add Wet Ingredients: To the dry ingredients in the mug, add the vegetable oil or melted butter, buttermilk (or sour cream), vanilla extract, and red food coloring. Stir until the batter is smooth and all ingredients are well combined.
  • Microwave: Place the mug in the microwave and cook on high for 70-90 seconds. Cooking time may vary depending on your microwave’s power. Keep an eye on it; you want the cake to rise without overflowing the mug.
  • Check Doneness: The cake should be firm to the touch on top. Use a toothpick to check if it comes out clean or with a few moist crumbs attached. This indicates that the cake is cooked through.
  • Cool and Frost (Optional): Allow the cake to cool slightly before topping it with a dollop of cream cheese frosting, if desired.
