Pumpkin Bread with Cream Cheese Frosting

Ingredients

  • 15 oz pure pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1/2 cup melted butter
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1/2 cup milk
  • 1 3/4 cup all-purpose flour
  • 1 tsp cinnamon
  • 3/4 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1/2 tsp salt

Cream Cheese Frosting

  • 2 oz cream cheese
  • 2 tbsp unsalted butter
  • 1 cup powdered sugar
  • 1/4 tsp vanilla extract

Instructions

  • Preheat the oven to 350°F and prepare a loaf pan with non-stick spray or butter.
  • beat together eggs, brown sugar, granulated sugar, pumpkin puree, melted butter, and water until combined. 
  • Add in your flours and mix until no more white flour streaks remain.
  • Pour the batter into the prepared loaf pan. 
  • Bake for 30 minutes, then place a tented piece of aluminum foil over the loaf pan.
  • Bake for an additional 20 minutes, or until a knife inserted in the center of the loaf comes out clean.
