Protein Cinnamon Roll Muffins

Servings: 9 muffins

Ingredients

  • 1/2 cup oat flour
  • 2 scoops vanilla protein powder
  • 1/2 cup nut or seed butter
  • 1/2 cup apple sauce
  • 1/2 cup unsalted butter
  • 1 tbsp cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Glaze

  • 3/4 cup powdered sugar
  • 2 tbsp milk

Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with non-stick cooking spray.
  • In a bowl, combine the oat flour, vanilla protein powder, cinnamon, and baking powder. Stir until well combined.
  • In a separate bowl, mix together the nut or seed butter, unsweetened applesauce, melted unsalted butter, and vanilla extract. Stir until the mixture is smooth and well combined.
  • Pour the wet ingredients into the bowl with the dry ingredients. Stir until the batter is thoroughly mixed and there are no dry pockets.
  • Divide the batter equally among the prepared muffin cups, filling each one about three-quarters full.
  • Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The muffins should be golden brown and slightly springy to the touch.
  • While the muffins are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar and milk until you achieve a smooth and pourable consistency.
  • Once the muffins have cooled slightly, drizzle the glaze over the tops. Feel free to get creative with your drizzle patterns!
