In a blender add all of your ingredients and blend until creamy and smooth.
Pour your mixture in a square mold and place in the freezer for 30 minutes.
In the meantime, melt your chocolate with coconut oil in 30 second intervals. Make sure to stir in between each interval.
Pop out the caramel bites and dip them in your melted chocolate.
Place them on a parchment lined baking sheet and store in the freezer for 15 minutes or until hardened.
Dig in and enjoy!
