Paleo Chocolate Coconut Donuts

Course: Breakfast, Dessert
Servings: 6 donuts

Ingredients

  • 1/2 cup pumpkin puree
  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey
  • 1/4 cup buttermilk
  • 1/4 tsp vanilla
  • 1/4 cup milk
  • 2 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp cornstarch
  • 2 tbsp ground flaxseed
  • 1/4 cup cocoa powder
  • 1/3 cup spelt flour
  • 1/4-1/2 cup white chocolate
  • unsweetened coconut flakes

Instructions

  • Preheat your oven to 375F
  • In a small bowl mix in your wet ingredients
  • Slowly add in your dry ingredients. Mix until incorporated
  • Grease your donut pans and scoop the batter into the pan
  • Bake for 10 minutes
  • Makes about 6 donuts
  • Once the donuts have cooled, dip them in the melted white chocolate and roll them into the coconut lakes ( placed in a separate bowl)
