In a large mixing bowl, combine the rolled oats, nut butter, honey, protein powder, chocolate chips, m&ms, chia seeds or flax seeds (if using), vanilla extract, and a pinch of salt.
Stir the ingredients together until everything is evenly distributed and the mixture starts to come together. You may need to use your hands to fully incorporate all the ingredients.
Once the mixture is well combined, use your hands to roll it into small, bite-sized balls. If the mixture is too sticky, you can wet your hands slightly with water to prevent sticking.
Place the energy bites on a baking sheet lined with parchment paper, and chill them in the refrigerator for at least 30 minutes to firm up.
Once firm, transfer the energy bites to an airtight container and store them in the refrigerator for up to one week. You can also store them in the freezer for longer-term storage.
