Keto Cinnamon Loaf

Course: Breakfast, Dessert

Ingredients

  • 2 eggs
  • 2 tbsp egg whites
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1/4 cup sticky sweetener (maple syrup) Choczero is my go to
  • 1/4 cup cashew butter
  • 1/4 cup coconut flour
  • 1/4 cup almond flour
  • 1/2 tsp baking soda

Cream Cheese Frosting

  • 1 packet of cream cheese
  • 2 tbsp cinnamon
  • 2 tbsp sugar-free sweetener (stevia, Windrose)
  • 1 tbsp unsweetened almond milk
  • 1 tbsp ChocZero Keto Maple Syrup

Instructions

  • Preheat the oven to 350F
  • In a large mixing bowl, combine the dry ingredients and mix well.
  • In a small bowl, mix the eggs, vanilla extract, sticky sweetener, and applesauce. Pour into the dry mixture.
  • Mix well untilĀ  a batter is formedĀ 
  • Get a loaf pan and line with parchment paper. Transfer the batter into the pan
  • Bake for 30-35 minutes or until golden brown on top and a toothpick comes clean.
  • Remove from the oven and allow to cool completely before serving it or putting on the frosting!

Cream Cheese Frosting

  • Put all the ingredients in a bowl and whisk together with an electric mixer.

Notes

  • can use 1/2 cup coconut flour
  • can use 3 eggs
