Keto Blackout Chocolate Cupcakes

Ingredients

  • 4 eggs
  • 1 tsp vanilla extract
  • 1/2 cup monk fruit powdered sweetener
  • 3 tbsp unsalted butter
  • 1/2 cup almond flour
  • 1/4 cup pecan flour ( or 3/4 cup almond flour)
  • 1 1/2 tsp baking powder

Frosting Details

  • 1/4 cup coconut milk
  • 1/4 cup coconut oil
  • 1 cup Lily's milk chocolate morsels

Instructions

  • Preheat oven at 350F
  • in a medium. bowl mix your liquids together. Then graduall add in your flour. Mix with your spatula
  • Line your pan with cupcake liners or just lughtly coat withcoconut oil or baking soray
  • Fillyour muffin tin about 3/4 way
  • Bake for 20-25minutes (mine were perfect at 22)
  • While this is baking, in a double boiler mix your frosting ingedients
  • Mixwelland then set aside in the freezerfor 15-25 minutes
  • Takeout andwhisk! Top your cupcakes and enjoy!!
