Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
In a large bowl, mash the ripe bananas using a fork.
Add honey or maple syrup, melted coconut oil, egg, and vanilla extract to the mashed bananas. Mix well until everything is well combined.
In a separate bowl, whisk together whole wheat flour, cocoa powder, baking powder, baking soda, and salt.
Add the dry ingredients to the wet ingredients and stir until just combined. Avoid overmixing.
Fold in the Greek yogurt, dark chocolate chips, and chopped nuts if using.
Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
