Healthy Chocolate Granola

Ingredients

  • 2 cups rolled oats
  • 1/2 cup chopped almonds
  • 1/2 cup chopped pecans
  • 1 tbsp chia seeds
  • 1/4 cup cocoa powder
  • 1/4-1/2 tsp salt
  • 1/4 cup coconut oil
  • 1/3 cup maple syrup
  • 1/4 cup truvia
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips

Instructions

  • Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the rolled oats, chopped almonds, chopped pecans, chia seeds, cocoa powder, and salt. Mix well to ensure even distribution of ingredients.
  • In a small saucepan, melt the coconut oil (or butter) over low heat. Remove from heat and add the maple syrup, truvia (or coconut sugar), and vanilla extract. Stir until well combined and the sweeteners have dissolved.
  • Pour the liquid mixture over the dry ingredients in the mixing bowl. Stir until all the dry ingredients are evenly coated.
  • Spread the granola mixture onto the prepared baking sheet in an even layer. Press it down gently to ensure clusters form.
  • Bake in the preheated oven for about 20-25 minutes, or until the granola turns crispy and golden. Stir the granola every 10 minutes to ensure even baking.
  • Once baked, remove the granola from the oven and let it cool completely on the baking sheet. As it cools, it will become crispier.
  • Once cooled, add the chocolate chips to the granola and gently mix to distribute them throughout.
  • Transfer the healthy chocolate granola to an airtight container or jar for storage. It can be kept at room temperature for up to two weeks.
