Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine the mashed bananas, almond butter (or peanut butter), honey (or maple syrup), vanilla extract, ground cinnamon, and salt. Mix until well combined.
Add the rolled oats and oat flour to the banana mixture and stir until all the oats are coated and the mixture is well combined.
If using, fold in dark chocolate chips until evenly distributed throughout the dough.
Using a spoon or cookie scoop, drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 12-15 minutes or until the cookies are lightly golden brown around the edges.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
