Halloween Monster Cookies

Ingredients

  • 1 1/2 cup old fashined oats
  • 1 cup all purpose flour
  • 1/2 cup unsalted butter
  • 1/2 cup creamy peanut butter
  • 1/2 cup coconut sugar
  • 1/3 cup maple syrup
  • 1 egg
  • 2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup M&Ms
  • 3/4 cups chocolate chips
  • 1/2 cup mini chocolate chips

Instructions

  • Preheat and Prep: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix the Dry Ingredients: In a medium-sized bowl, combine the oats, all-purpose flour, baking soda, and salt. Set aside.
  • Cream the Wet Ingredients: In a large bowl, cream together the softened unsalted butter, creamy peanut butter, coconut sugar, maple syrup, egg, and vanilla extract until smooth and well combined.
  • Combine Wet and Dry Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, stirring until everything is thoroughly combined.
  • Add Candy and Chips: Gently fold in the M&Ms and chocolate chips until they're evenly distributed throughout the cookie dough.
  • Form Cookie Dough Balls: Using a spoon or cookie scoop, portion out the dough into balls and place them on your prepared baking sheet. Be sure to leave some space between each cookie.
  • Bake to Perfection: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Keep in mind that the cookies will continue to set as they cool.
  • Cool and Enjoy: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Then, unleash the monster cookie fun!
