Gluten-Free Chocolate Chip Cookies

Ingredients

  • 1/2 cup vegan butter melted
  • 1/2 cup white sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cup gluten-free all purpose flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/3 cup DF chocolate

Instructions

  • Preheat oven to 375 degrees F. Line 2 baking sheets with parchment paper, set aside.
  • In a medium bowl, cream together butter and sugars until light and fluffy.
  • Add in egg & vanilla until combined.
  • In the bowl of a standing mixer fitted with the paddle attachment, cream together butter and sugars until light and fluffy.
  • Add in your chocolate chips until combined.
  • Use a small cookie scoop to measure dough, then roll into balls and place on prepared baking sheets at least 2” apart
  • Bake in preheated oven for 9-10 minutes, or until cookies are barely set.
  • Let it cool on a wire rack!
