Preheat your oven to 325F.
Mash your bananas. In a mixing bowl combine the mashed bananas, oil, sugar, egg and vanilla extract. Stir to combine with a spatula.
Add in the gluten free flour, baking soda, cinnamon, and salt, stir together with a spatula.
If adding chocolate chips, mix them in now.
If adding chocolate chips, mix them in now.
Bake for 25-30 minutes. Stick a toothpick in them to check if they are done.
