Flourless Pumpkin Blondies

Ingredients

  • 1 egg
  • 1/2 cup ChocZero maple syrup
  • 1 cup honey almond butter (any nut butter will do)
  • 1/2 cup pumpkin puree
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tbsp pumpkin pie spice
  • 1 tsp baking soda
  • 1 tsp baking powder

Instructions

  • Preheat oven to 350F and prepare an 8×8 baking sheet by lining it with parchment paper.
  • Add all of the ingredients, with the exception of the chocolate chips, in a medium bowl and mix until creamy and smooth.
  • Pour batter into your prepared baking panand sprinkle with chocolate chips. Also have the option to add chocolate chips to the batter.
  • Bake for 20-25 minutes. Allow to cool before cutting. 
  • Store in fridge for up to 5 days.
