Easy Banana Pumpkin Bread

Ingredients

  • 2 large eggs
  • 2 ripe bananas
  • 1 cup pumpkin puree
  • 1/2 cup unsalted butter melted
  • 1/4 cup coconut sugar
  • 1/2 cup light brown sugar
  • 1 tsp vanilla extract
  • 1 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp nutmeg
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Streusel Topping

  • 1/2 cup all purpose flour
  • 1/2 tsp cinnamon
  • 1/2 cup brown sugar
  • 6 tbsp cold butter diced

Instructions

  • Preheat oven to 350°F. Grease a loaf pan and line it with parchment paper. Set aside.
  • In a large bowl, combine the mashed bananas, pumpkin puree, brown sugar, melted butter, eggs, and vanilla extract. Whisk until everything is mixed together.
  • Add in the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and pumpkin pie spice. Whisk until everything is combined. Pour batter into your loaf pan.
  • In a medium-sized bowl, combine all of the streusel ingredients. Mix together with a fork until clumps form. Sprinkle evenly on top of the bread batter.
  • Bake for about 50-55 minutes.
  • Allow to cool before cutting into it. Enjoy!
