Creamy Mushroom Quinoa Risotto

Ingredients

  • 1 cup white quinoa
  • 8 oz mushrooms
  • 2 garlic cloves
  • 1/4 cup onion chopped
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3/4 cup chicken broth
  • 1/4 cup heaavy creaam
  • 1/2 cup gratedparmesaan cheese
  • salt and pepper to taste

Instructions

  • In a small pot boil your quinoa. Bring it to a boil and reduce to simmer until all the water has been absorbed (about 15 minutes)
  • While the quinoa cooks , add your olive oil and mushrooms to a park over medium heat. Cool until mushrooms have softened .
  • Add in your onions and garlic as wel as the butter. Mix to combine for a few minutes .
  • When your quinoa is done toss that in with the mushrooms, add your chicken stock, Parmesan cheese, and heavy cream
  • Keep mixing until it thickens.
