In a small pot boil your quinoa. Bring it to a boil and reduce to simmer until all the water has been absorbed (about 15 minutes)
While the quinoa cooks , add your olive oil and mushrooms to a park over medium heat. Cool until mushrooms have softened .
Add in your onions and garlic as wel as the butter. Mix to combine for a few minutes .
When your quinoa is done toss that in with the mushrooms, add your chicken stock, Parmesan cheese, and heavy cream
Keep mixing until it thickens.
