Cottage Cheese Chocolate Chip Muffins

Ingredients

  • 1 cup cottage cheese
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup coconut sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups oat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup  mini chocolate chips or regular chocolate chips I mixed half mini and half normal size

Instructions

  • Preheat your oven to 350°F . Line a muffin tin with paper liners or grease it lightly.
  • In a large bowl, whisk together the cottage cheese, melted butter, granulated sugar, eggs, and vanilla extract until smooth and well combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Fold in the chocolate chips gently until they are evenly distributed throughout the batter.
  • Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with just a few crumbs attached.
  • Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
