Preheat your oven to 350°F (175°C) and prepare a baking pan by lining it with parchment paper.
In a mixing bowl, cream together the softened butter, cookie butter, and coconut sugar until well combined.
Add the egg and vanilla extract, mixing until smooth.
In a separate bowl, whisk together the salt, baking powder, and all-purpose flour.
Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
Fold in the white chocolate chips, distributing them evenly throughout the dough.
Press the dough into the prepared baking pan, ensuring it's spread out evenly.
Press the dough into the prepared baking pan, ensuring it's spread out evenly.
Bake for 20-25 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean. (24 minutes was perfect for me)
Allow the bars to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Once cooled, slice into bars and indulge in the heavenly flavors of cookie butter and white chocolate.
