Christmas Crack Cookies

Ingredients

Crack bars

  • 20-25 saltine crackers
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter
  • 3/4 cups chocolate chips

Cookies

  • 1 cup unsalted butter
  • 1 cup brown sugar packed
  • 1 egg
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup chocolate, chopped

Instructions

Make the Crack Bars

  • Preheat your oven to 350°F. Line a baking sheet with parchment paper and arrange the saltine crackers in a single layer, covering the entire surface. Set aside.  
  • In a small saucepan over medium heat, melt the butter and brown sugar together. Stir continuously until the mixture begins to bubble and thicken slightly, about 3-4 minutes.  
  • Pour the toffee mixture evenly over the saltine crackers, spreading it out with a spatula to coat them all.  
  • Place the baking sheet in the oven and bake for 5 minutes, or until the toffee is bubbling.  
  • Remove from the oven and immediately sprinkle the chocolate chips over the hot toffee. Let the chocolate sit for a minute to soften, then spread it evenly over the toffee layer with a spatula.  

Make the Cookies

  • Preheat your oven to 350°F and line two baking sheets with parchment paper.  
  • In a large mixing bowl, use an electric mixer to beat the butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.  
  • Add the egg, egg yolk, and vanilla extract to the bowl. Mix until fully incorporated.  
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.  
  • Fold in the chopped chocolate and pieces of the prepared toffee until evenly distributed throughout the dough.  
  • Scoop about 2 tablespoons of cookie dough for each cookie, rolling them into balls. Place them on the prepared baking sheets, leaving about 2 inches of space between each cookie.  
  • Bake the cookies for 10-12 minutes, or until the edges are set but the centers are still soft. The cookies will continue to bake on the hot baking sheet after they come out of the oven.
