In a large bowl, add in egg, coconut oil, coconut sugar, and vanilla extract. (Make sure your coconut oil is cool!)
Next add in almond flour, coconut flour, chai tea latte mix and baking soda. Mix well to combine and form a dough. Fold in chocolate morsels.
Use a cookie scoop or large tablespoon to drop dough onto ungreased baking sheet or parchment paper. Bake for 11-13 minutes, or until edges are slightly golden brown. (11 minutes worked fine for me)
Notes
Olive oil will also work well if you don't have coconut oil.
