Chai Tea Latte Cookies [Chocolate Chip]

Paleo Chai Tea Latte cookies made with both coconut and almond flour. These low carb cookies are a dream come true! Gluten, grain and dairy-free.

Ingredients

  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 cup melted coconut oil
  • 1/2 cup coconut sugar
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup Coconut Cloud Chai Tea Latte Mix
  • 1/2 tsp baking soda
  • 1/2 cup small chocolate morsels OPTIONAL

Instructions

  • Preheat oven to 350 degrees F.
  • In a large bowl, add in egg, coconut oil, coconut sugar, and vanilla extract. (Make sure your coconut oil is cool!) 
  • Next add in almond flour, coconut flour, chai tea latte mix and baking soda. Mix well to combine and form a dough. Fold in chocolate morsels.
  • Use a cookie scoop or large tablespoon to drop dough onto ungreased baking sheet or parchment paper. Bake for 11-13 minutes, or until edges are slightly golden brown. (11 minutes worked fine for me)

Notes

Olive oil will also work well if you don't have coconut oil.
