Breakfast Oatmeal Cookies

Dairy-Free | Low Sugar | Gluten-Free

Ingredients

  • 2 eggs
  • 1 tbsp coconut oil
  • 1/2 cup almond milk
  • 2 tbsp cashew butter
  • 2 tbsp Wondrose sugar
  • 2 cups almond flour
  • 1/2 tbsp cinnamon
  • 1 tsp baking soda
  • 2 cups quick oats

Instructions

  • Preheat the oven to 350F
  • In a bowl mix together coconut oil, almond milk, sugar
  • Whisk in eggs
  • Stir in cashew butter until combined
  • Combine flour, cinnamon, and baking soda in a separate bowl and then pour into the wet ingredients
  • Add in oats and stir until combined
  • Roll dough in balls and place on a baking sheet
  • Bake for 8 mins
  • Let sit on a cooling rack for about 5 mins
  • Enjoy!
