Banana Bread Energy Bites

Ingredients

  • 1 1/2 cup rolled oats
  • 1/2 cup mashed banana
  • 1/4 cup creamy cashew butter or peanut butter
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 cup chopped walnuts

Chocolate Drizzle

  • 1/4 cup chocolate
  • 1 tsp coconut oil

Instructions

  • Start by mashing the ripe banana until smooth. Measure out all the other ingredients and have them ready.
  • In a food processor, combine the mashed banana, peanut butter, honey (or maple syrup), and vanilla extract. Mix until well combined.
  • Add the rolled oats, ground cinnamon, ground nutmeg, walnuts, and a pinch of salt to the food processor and blend.
  • Place the bowl in the refrigerator for about 15-20 minutes. Chilling the mixture makes it easier to roll into bites.
  • Once the mixture has chilled, take small portions and roll them into bite-sized balls using your hands. You can make them as big or small as you prefer.
  • Place the banana bread energy bites on a plate or baking sheet lined with parchment paper. Allow them to set in the freezer for at least 30 minutes. Melt your chocolate and drizzle over your bites.
  • Once the energy bites have set, you can transfer them to an airtight container. Store them in the refrigerator for up to a week. Grab them whenever you need a quick and nutritious energy boost!
