Start by mashing the ripe banana until smooth. Measure out all the other ingredients and have them ready.
In a food processor, combine the mashed banana, peanut butter, honey (or maple syrup), and vanilla extract. Mix until well combined.

Once the mixture has chilled, take small portions and roll them into bite-sized balls using your hands. You can make them as big or small as you prefer.
Place the banana bread energy bites on a plate or baking sheet lined with parchment paper. Allow them to set in the freezer for at least 30 minutes. Melt your chocolate and drizzle over your bites.
Once the energy bites have set, you can transfer them to an airtight container. Store them in the refrigerator for up to a week. Grab them whenever you need a quick and nutritious energy boost!
