Cranberry-Granola-Bars

Ingredients

  • 2 cups rolled oats
  • 1 cup dried cranberries
  • 1 cup nuts(almonds, walnuts, or a mix), chopped
  • 1/2 cup honey
  • 1/3 cup nut butter (almond butter, peanut butter, or any of your choice)
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  • In a large mixing bowl, combine the rolled oats, dried cranberries, and chopped nuts
  • In a separate bowl, whisk together the honey or maple syrup, nut butter, melted coconut oil, vanilla extract, and salt.
  • Pour the wet mixture over the dry ingredients. Stir well until everything is evenly coated.
  • Transfer the mixture into a square or rectangular dish lined with parchment paper. Press it down firmly to create a compact and even layer.
  • Place the dish in the refrigerator for at least 2 hours, or until the granola bars are firm.
  • Once chilled, lift the parchment paper to easily remove the solidified mixture from the dish. Place it on a cutting board and cut into bars.
  • Store the granola bars in an airtight container in the refrigerator.
