Vegan Oatmeal Cookie Bars Ingredients
- Egg replacer. This is my favorite one
- date syrup – these vegan oatmeal cookie bars are entirely refined sugar free as well!
- vegan butter – you can use coconut oil, but these bars taste best with vegan butter
- unsweetened apple sauce
- rolled oats
- all purpose flour – you can use all-purpose, gluten-free 1:1 baking flour, or even oat flour!
- almond flour
- vanilla extract
- salt
- baking powder
- baking soda

To start, make sure you measure out all of your ingredients. It is also important your vegan butter is at room temperature.

- Cream the wet ingredients together
- Fold the dry ingredidents in with the wet

Can I make these bars gluten-free?
Yes! You can make these Vegan Oatmeal Cookie Bars gluten-free as well! You can use gluten-free 1:1 flour or oat flour! Oat flour is definitely a good option! These bars are super delicious and moist!
For the gluten-free 1:1 baking flour, you can swap the same amount that you would use for all-purpose flour. With oat flour, you need to use a bit more and add a touch of arrowroot powder.

Vegan Oatmeal Cookie Bars
Ingredients
- 1 egg replacer
- 1/2 cup date syrup
- 1/2 cup vegan butter room temperature
- 2/3 cup unsweetenedd apple sauce
- 1 cup rolled oats
- 1/2 cup almond flour
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
Instructions
- Preheat the oven to 350F, and line an 8×8 baking pan with parchment paper and oil.
- Whisk the dry ingredients: in a medium bowl, whisk together the flour, rolled oats, baking powder, baking soda, and sea salt. Set aside.
- Mix the wet ingredients: in a bowl, cream together the vegan butter and date syrup, about 2-3 minutes. Then add in the applesauce and vanilla extract and mix again.
- Fold in the dry ingredients: add the dry ingredients to the wet and use a rubber spatula to gently fold together. Then fold in the chocolate chips.
- Bake the cookie bars: press the dough into the baking pan and bake for 25-27 minutes, or until a toothpick comes out clean.
