Get ready for one of the best vegan mac and cheese you’ve ever had! Made with all of the vegan cheese and butter, this dish is easy to make and oh so delicious.

Macaroni and cheese is a staple for every child and every household. It’s known by pretty much everybody and a go-to as a feel-good food. Honestly, who hasn’t had Kraft Mac and Cheese at some point? Its totally the best. Maybe not the best for you…. but the best nonetheless.

Vegan Mac and Cheese Ingredients

I started by cooking one of my fave pastas. It is Yellow Lentil Penne Rigati. If it is overcooked this pasta will break easily so be careful of this. They’re packed with plant-based protein and an excellent source of fiber! You can choose whatever pasta you desire as well!

What is nutritional yeast?

Nutritional yeast is deactivated yeast that has a nutty or cheesy flavor.

How long will vegan mac and cheese last?

This Mac & Cheese can last up to a week in the refrigerator! I typically wrap my containers in cellophane wrap to keep moisture out!

Mac and Cheese Toppings

This mac and cheese was delish just plain, but feel free to add some of your favorite toppings!

  • Steamed broccoli
  • Vegan grated cheese
  • Bread crumbs
  • Sauteed mushrooms
  • Peas

If you aren’t vegan and want to get even more creative with the toppings you can add:

  • Bacon bits
  • Shredded chicken
  • Tuna

Vegan Mac and Cheese

Course: Dinner, Lunch

Ingredients

  • 10 oz pasta of choice I used yellow lentil penne rigate
  • 1 tbsp oil
  • 1 tbsp vegan butter or margarine
  • 1/4 cup minced onions
  • 1.5 cup almond milk
  • 2 slices vegan gouda cheese
  • 1 slice vegan cheddar cheese
  • 2 tbsp nutritional yeast
  • 1.5 tbsp flour
  • shredded vegan cheese for garnish

Instructions

  • Bring a pot of water to boil.
  • Cook your pasta of choice.
  • Drain pasta into a colander and set aside some of the cooking water.
  • In the same pot, saute oil and onions.
  • Pour in almond milk & stir.
  • Add in your cheese ad stir consistantly until all melted.
  • Add in nutriitonal yeast and stir until combined.
  • Add the pasta into the cheeesy mixture and fold.
  • Add in 1.5 tbsp of flour and stir.
  • Depending on your desired mac and cheese consistency, you may want to add more flour or cooking water to make it thicker and thinner.
  • Sprinkle with vegan shredded cheddar cheese and enjoy!
