How to Make Vegan Double Chocolate Chip Cookies
The best thing about these cookies is that they are so simple to make. Before We go into how it’s done I want to go into detail about the ingredients.
Flour – I personally love King Arthur or Bob’s Red Mill gluten-free and regular flour
Cocoa Powder – This is absolutely necessary if you want that rich chocolate flavor.
Vegan Butter: You can use all coconut oil if you wish, but I personally love the taste of butter in baked goods.
Now let’s go into baking these cookies!
First, set up your workspace how you like,
Next, you’ll need to
- Beat together the coconut oil, coconut sugar, butter, and vanilla extract
- Sift in the dry ingredients – cocoa powder, flour, baking powder, and salt
- Fold in the Chocolate Chips.
- Make the cookies and place them on the parchment-lined baking sheet!
- Pan banging method: once you remove the cookies bang them on the countertop 3-4 times to help flatten the cookies
- Let them cool

Can I refrigerate the cookie dough? Cookie dough can be refrigerated overnight before using. Shape the dough into balls and cover them with a wrap before chilling. Bring them to room temperature before baking. Personally, I normally don’t let them sit in the fridge because I am impatient when it comes ot my baked goods!! Hahaha
Can I use less sugar? I will leave this up to you. I usually try not to go overboard with the sugar. Sometimes the amount of sugar DOES affect the look of your cookie though.
Can I use regular flour? YES. I just used gluten-free for these particular cookies.
Why are my cookies burning on the bottom? Make sure that you completely combined your batter – doing a final stir with a spatula will help make sure everything is incorporated. Sometimes the oven itself can be the culprit.

- 1/3 cup melted coconut oil
- 1 tsp vanilla extract
- 1/4 cup vegan butter
- 3/4 cup coconut sugar
- 2/3 cup cocoa powder
- 1/2 tsp salt
- 3/4 cup pecan flour
- 3/4 cup gluten free flour

- Preheat the oven to 350F and line. A baking sheet with parchment paper
- In a large bowl, beat together the coconut oil, coconut sugar, butter, and vanilla extract
- Sift in cocoa powder , flour, baking powder and sea salt
- Fold in chocolate chips
- Bake for about 10-12 minutes
- Let them cool and dig in
