What are Cookie Bars?
These Vegan Cookie Bars are basically the cousin for a cookie. Maybe even a relative to a blondie. Some may even call these cookie bars a blondie, but I find myself offended when blondies have CHOCOLATE in it. Isn’t it supposed to be blonde? Aka chocolate free in my opinion? Maybe it is just me.
I love a classic chocolate chip cookie, but figured I’d switch it up this time! If you’re tired of that same old cookie, why not try eating them in BAR form?
Yeah, I know… pretty revolutionary.
These classic vegan cookie bars taste similar to a regular chocolate chip cookie but are wayyy easier to make! I absolutely love making cookies, but sometimes it feels like it takes forever to roll them all into balls. So if you are feeling lazy like me, all you’ll need to do is grab a bowl, mix everything together, slap it in a pan, and bake it!! Also, if you happen to be a fan of blondies with chocolate in them… I think these will totally satisfy your hankering!
Vegan Cookie Bars ingredients
You’ll only need 6 ingredients that you probably already have in your fridge or pantry!
- unsalted vegan butter – I ALWAYS bake with unsalted butter so I can control the amount of salt going into my baked goods. If all you have is salted butter, don’t worry! Simply reduce the amount of added salt by 1/4 teaspoon!
- packed brown sugar – You can go dark or light brown sugar with these vegan cookie bars. If you are looking for a deeper brown sugar flavor, I would suggest dark brown sugar!
- flax egg – Make sure you make your flax egg a few minutes ahead of time, so it has time to thicken and sit.
- vanilla extract – pure vanilla extract is a must with these cookie bars! Don’t be afraid to accidentally add another drop or two.
- baking powder – baking powder will allow your bars to rise just enough so that they aren’t too dense or too cakey! Make sure you are using baking POWDER, not soda.
- all-purpose flour – You can also use Bob’s Red Mill 1:1 Gluten Free Baking Flour in this recipe!
- dairy-free morsels – Go crazy with your chocolate! One of my favorite dairy-free brands is Enjoy Life.
Substitutions and Additions
Sprinkles: For a festive colorful twist
Other types of chocolate: Semi-sweet is my go to for your classic chocolate chip cookie! If you want to try something different, you can use dark chocolate or maybe even chunks! Milk chocolate and white chocolate, however, can burn a bit more easily.
Nuts: If you love nuts in your chocolate chip cookies, then try adding them in these new bars!
Tips for Making the Best Vegan Cookie Bars
- Don’t over-mix your batter: when you do this you will end up with a dry and tough cookie bar!
- Have fun! Don’t want just chocolate? Add white chocolate or your fave candy!
- Don’t overbake: You’ll want to take these out when they are still a bit soft in the center to prevent them from drying out.
Storage: What is the best way to keep these cookie bars fresh and chewy for days?
First, always make sure your bars are cooled before storing them to prevent condensation. You can store them in an airtight container, plastic bag, or tightly wrapped in aluminum foil for up to 7 days.

Vegan Cookie Bars
Ingredients
- 1 cup vegan butter (softened)
- 2/3 cup brown sugar (sugar free)
- 1/2 cup smaert sugar (Miss Jones)
- 1/2 tsp salt
- 1 tsp baking soda
- 1.5 tsp vanilla extract
- 2 1/4 cups all purpose flour
- 2 cups chocolate chips
Instructions
- Preheat your oven to 350F.
- Cream your softened butter and your sugar togehter until creamy. Next beat in your vanilla extract.
- Combine your flour and mix well. Lastly, add in your chocoalte chips.
- Line an 8 x 8 inch pan with parchment paper and press your batter into the pan. Bake for 25 – 30 minutes
