These Vegan Cinnamon Pecan Bars are a healthy dessert that the whole family will love! They are made with maple syrup, pecans, and a delicious vanilla frosting. Oh, and they are filled with all the cinnamon flavors you can ever need in life.

So I am going to admit something scandalous.

I don’t LOVE pecans. You know when it’s Christmas time and there is pecan and pumpkin pies laying around? Yeah, I usually skip those. For some reason chunks, whether it’s pecans or almonds bother me from time to time. However, I think I am finally overcoming my weird aversion to nuts on desserts!

To celebrate my broadening horizons, I decided it was time I test out something different: Vegan Cinnamon Pecan Bars.

Let me tell you, they did NOT disappoint. They taste best straight out of the oven! The cinnamon flavor comes through and fills your mouth with amazing goodness.

Do these vegan cinnamon pecan bars need to be refrigerated?

If you are not serving these pecan pie bars immediately I would suggest refrigerating the bars for up to a week in the fridge.

Can I freeze cinnamon pecan bars?

Sure thing! You can freeze these bars in an airtight container for up to a month! Just make sure they have completely cooked before placing them in the freezer!

Can I add other nuts to this?

Go on ahead! I considered adding some chopped walnuts or almonds to this! Totally your personal preference!

Vegan Cinnamon Pecan Bars

Ingredients

  • 2 flax eggs (2 tbsp flax meal mixed with 6 tbsp water)
  • 3 tbsp coconut oil
  • 1/3 cup creamy cashew butter
  • 1/2 tsp vanilla extract
  • 1/4 cup maple syrup
  • 1/2 cup unsweetened almond milk
  • 1 3/4 cup almond flour
  • 1/4 cup coocnut flour
  • 2 1/4 tsp cinnamon
  • 1 tsp baking soda

Frosting

  • 1/2 cup Greek yogurt/ vegan cream cheese
  • 1-2 tbsp coconut oil
  • 1 tbsp maple syrup

Instructions

  • Preheat your oven to 350F degrees.
  • Add your wet ingredients to a bowl and mix.
  • Then add your dry ingredients and combine well.
  • Gather an 8×8 pan and place your batter in the pan. Bake for 25 minutes
