Making these Breakfast Oatmeal Muffins
Healthy Swaps to Make:
Sugar: Skip the pure sugar and swap it for a monk fruit baking sweetener. I used Lakanto’s Powdered Baking Sugar. You can find it easily on Amazon here. You can save on all the bad stuff while still having the best flavor and texture!
Flour: While we all know regular old flour tastes amazing, this recipe tastes SO GOOD with way fewer carbs. It’s time to break out the almond flour with this one! If you wish t use regular flour, I would recommend using about 2 cups. Add it in slowly so you make sure your batter is not too thick.
Here is the Almond Flour I used.
Milk: Instead of using whole milk or dairy milk, I used Nutpods oat creamer. It has such a nice rich texture without the calories and fat. It has zero sugar and is diabetic-friendly! This creamer is perfect for anyone who follows a keto, plant-based (vegan), vegetarian, and lactose-free diet!
Fat: All you need for this is some coconut oil. You can even add applesauce if you want

- Nut pods creamer
- Quaker Oats
- Almond flour
- Baking powder
- Baking soda

How to Freeze these muffins
This is a great recipe to make more of so you can save for a later occasion.
- First, let your oatmeal muffins cool completely.
- Then place muffins in a freezer-safe bag
- Store for as long as you want!
To Thaw: Remove a frozen muffin from the bag. Let it thaw on the counter or put it in the microwave for a few minutes.

Superfood Oatmeal Breakfast Muffins
Ingredients
- 3 eggs
- 1/3 cup coconut oil
- 2/3 cup monkfruit sweetener (powdered sugar)
- 1/3 cup nut pods creamer
- 1 cup Quaker OAts
- 2 1/2 cups almond flour
- 1/2 tsp baking powder
- 1 tsp salt
- 2 tbsp Organifi
Instructions
- Preheat oven to 350F
- Mix all your wet ingredients together. Then add your sugar and blend.
- Next, add the remaining ingredients and mix well.
- Spray your muffin tins and pour your batter about 3/4 of the way in
- Bake for 18 minutes! Stick a toothpick in then to make sure they are completely done !!
