S’mores Cookie Bars

Course: Dessert

Ingredients

  • 7-8 graham crackers (unbroken)
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semi sweet chocolate chips
  • 1 cup mini marshmallows
  • 2 Hershey Milk Chocolate Bars

Instructions

  • Preheat your oven to 350°F and grease a 9×13-inch baking pan.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  • Add in your chocolate morsels & marshamllows
  • Press graham crackers to the bottom of the pan. Top with your cookie dough and make sure it is spread out evenly. Top with additional marshmallows if desired.
  • Bake at 350˚F for 25-30 minutes or until golden brown and a toothpick comes out clean from the center. Cover with foil if cookie dough browns faster than center bakes.
  • Remove bars from the oven and ad your Hershey bar pieces on top. Allow to cool for 20-30 minutes. This will help you be able to cut your bars without it falling apart.

    Can you please explain the recipe more? Not sure I understand the layering steps, and it looks like the oven temperature is missing? I really want to make this recipe ASAP!!

    I have no idea where the actual directions are, but these came out so good I don’t even care. The batter comes together like any cookie dough recipe, so here’s what I did:

    Preheat oven to 350F
    Cream sugars+butter in stand mixer
    Add eggs+vanilla, mix
    Add flour, baking soda, salt, mix
    Add chocolate chips and marshmallows, mix
    Lay graham crackers out in a brownie pan, plop all the cookie dough on top, layer with more marshmallows and broken up baking chocolate
    I think I baked it for like 25 minutes? Check it often if you’re worried. Mine came out a little undercooked in the best, gooiest way.

    So yeah, I can’t rate any lower than 5 stars because these came out ADDICTIVELY good, oh my god, we tore through them so quickly!!!
