How to Make Ritz Cookies
To start, you will need a few basic ingredients. For the cookie dough, you will need all-purpose flour, baking powder, salt, unsalted butter, white sugar, brown sugar, eggs, vanilla extract, semisweet chocolate chips, and of course, Ritz crackers. The dough is easy to make and comes together quickly, making it the perfect treat for a busy weeknight or for satisfying a sweet tooth craving.
Begin by preheating your oven to 350°F and lining a baking sheet with parchment paper. In a medium bowl, whisk together the flour, baking powder, and salt and set aside. In a large bowl, cream together the butter, white sugar, and brown sugar until smooth. Next, beat in the eggs one at a time and stir in the vanilla extract. Gradually mix in the flour mixture until just combined. Finally, stir in the chocolate chips and crushed Ritz crackers.
Using a cookie scoop or spoon, drop rounded balls of dough onto the prepared baking sheet, about 2 inches apart. The cookies should bake for 10-12 minutes or until the edges are golden brown. Be sure to keep an eye on them, as baking time may vary depending on your oven. Once they are finished baking, allow the cookies to cool on the baking sheet for 5 minutes before removing them to a wire rack to cool completely.
The result is a cookie that is chewy on the inside and slightly crunchy on the outside. The combination of the flaky Ritz crackers and the rich semisweet chocolate chips creates a unique flavor that is both sweet and salty. The crackers also add a bit of texture to the cookie, making each bite a satisfying experience.
