Red Velvet Cake Mix Cookies Ingredients

  • Red velvet cake mix: This will make baking these cookies super easy!! You will be using a 15.25oz box of cake. The best part is, you do not need to have any red food coloring on hand!
  • Butter & sugar: I utilized melted butter instead of what the box says, oil. Also, although the cake mix has sugar, I added a bit more to make these cookies perfect.
  • Eggs & vanilla: Eggs provide structure, and vanilla extract is necessary for the perfect flavor
  • White Chocolate chips: The white chocolate and red velvet combo looks amazing together

Red Velvet Cake Mix Cookies

Course: Dessert
Servings: 20 cookies

Ingredients

  • 1 cup red velvet cake mix
  • 2 eggs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 1 tsp vanilla extract
  • 1 cup white chocolate chips

Instructions

  • To get started, preheat your oven to 375°F and line a baking sheet with parchment paper
  • In a large mixing bowl, beat together the cake mix, butter, eggs, and vanilla extract until a soft dough forms.
  • The dough may be a little sticky, so you may want to chill it in the refrigerator for about 30 minutes before rolling it into balls.
  • Once the dough is chilled and easy to handle, roll it into 1-inch balls and roll each ball in powdered sugar.
  • Place the balls on the prepared baking sheet, spacing them about 2 inches apart. Bake the cookies for 10-1 minutes, or until they're set and lightly golden around the edges.
