What are Pumpkin Overnight Oats

Overnight oats are an easy breakfast recipe that is made by mixing oats, milk, or cream and most often chia seeds together. It is no bake and is just left in the fridge overnight for the perfect breakfast.

Pumpkin overnight oats are the fall version of the classic overnight oats. It typically has pumpkin pie spice and all of the warm flavors.

Ingredients in Pumpkin Pie Overnight Oats

  • Rolled oats: Using rolled oats helps get the perfect, creamy texture
  • Chia seeds: I like adding chia seeds for a boost of healthy fats and to help with the creaminess
  • Pumpkin puree: make sure to not use pumpkin pie mix! I buy canned pumpkin because it is simple and quick to use!
  • Almond milk: I love using almond milk to get a nice creamy consistency. You can use any milk you like!
  • Protein powder: Chike iced coffee pumpkin protein powder is not only delicious, but it also provides you an extra boost of caffein throughout your day
  • Maple Syrup: this is always my go to natural sweetener.
  • Vanilla extract: for some additional flavor
  • Cozy spices: mix it all up with pumpkin pie spice for that true pumpkin pie flavor.

How to Make Pumpkin Overnight Oats

  • Mix the wet ingredients. In a medium bowl mix together almond milk, pumpkin puree, vanilla extract, and maple syrup.
  • Add the dry. Stir in the oats, chia seeds, protein powder, and spices.
  • Refrigerate & enjoy! Pour into a jar and place in the fridge for 4 hours or overnight

What do These Pumpkin Pie Overnight Oats Taste Like?

For my overnight oats recipe, I like to make sure they are the right balance of creamy, texture-rich, and lightly sweetened.

For my pumpkin pie overnight oats I added enough pumpkin flavor and then enhanced the flavor with my favorite fall spices, cinnamon, and more.

How to Store these Overnight Oats

These pumpkin pie overnight oats will stay in the refrigerator in an airtight container or mason jar for up to 5 days. Just give them a good stir or add another splash of almond milk.

Can you eat Overnight Oats Warm?

Yes! I usually eat this cold, but if you prefer your oats warm feel free to heat it up in the microwave for a minute or two before eating.

Ingredients

  • 1/2 scoop Chike Pumpkin protein powder Code cleaneaterr10
  • 1/2 tsp pumpkin pie spice
  • 3 tbsp pumpkin puree
  • 1/2 cup almond milk
  • 1/2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • chopped pecan for garnish

Instructions
