If I had to choose one… well that would be nearly IMPOSSIBLE. If it has chocolate, you can assume it’s already on my top list. But let me see…
Some of my favorite desserts/ snacks I’ve made here on the clean eater are
- No-bake almond butter chocolate chip cookies (pictured on the right)
- Collagen Brownies
- Vegan & grain-free Chocolate chunk cookies
- Gluten-Free chocolate muffins (chocolate was involved so this had it be included here)
If you were to ask my baking partners in crime aka my mom and sister, they would most likely hop on the chocolate train with me.
So, of course, they supported my quest to make a BROWNIE COOKIE or a brookie.
So good. So rich. So much chocolate. All of the things you’ve ever dreamed of! You’re going to want to make these. Trust me.
But before I tell you what you need to get started, let me share the rather funny origin of these paleo vegan brownie cookies.
So ya girl is obsessed with no-bake balls. Like how can you NOT be!? They’re so quick to make AND taste delish!
But as I stared at my balls, I thought, why not add a few ingredients here and BAKE them?! Luckily for me, they tasted EVEN better baked in the oven for 10 minutes!
These paleo vegan brownie cookies are:
- so easy to make, in just one bowl
- a chocolate lover’s dream come true
- perfect for you all you sweet tooth snackers out there
- spectacularly keto, paleo, vegan, and low carb
- awesome for a midday snack, after dinner snack or some dessert!!
- so good you’ll want to eat all of these cookies in one sitting
What do you need to make them?
- Coconut flour ( I love to use Bob’s Red Mill)
- Unsweetened cocoa powder (Hershey’s is dairy-free, so I sued that one)
- Maple syrup – this is one of my favorite sweeteners because it’s not only delicious, but it had important nutrients such as zinc, manganese, calcium, iron, potassium, and more!
- Vanilla extract –
- Milk of choice – I typically use Silk’s unsweetened almond milk whenever I make my healthy desserts
- Mini chocolate morsels

- 1 cup cashew butter
- 1/4 cup cocoa powder I used Hershey powder to keep it vegan
- 1/4 cup maple syrup
- 1 tbsp vanilla extract
- 1/4 -1/2 cup milk of choice the less milk you use, the thicker the spread. To make this even healthier I used unsweetened almond milk
- 1/4 cup coconut flour
- 1/4 cup vegan chocolate chips

- Preheat your oven to 350F and grab yourself a medium sized mixing bowl
- In a medium mixing bowl add your cashew butter, vanilla extract, and maple syrup. Mix together
- Next, add your cocoa powder and stir in slowly. It may be a bit thick, but this is where the milk comes in!
- Gradually add in your milk and mix. If you like it thick, go lighter on the milk. For a creamier texture, add in milk until you get your desired consistency. ( You may be able to add a hint of oil to smooth out your spread even further)
- Add your coconut flour & mix well until dough is formed
- Pour in 1/4 cup of mini chocolate morsels (make sure your spread isn't hot! You don't want your morsels melting into a liquid)
- Start rolling into small balls & place on a lined baking sheet
- Press sprinkles of choice into brownie balls and place in the oven for 10 minutes
