Paleo Double Chocolate Chip Cookie Bars [GF, Grain Free]

These paleo double chocolate chip cookie bars are gluten-free, grain-free, and can be made dairy-free if you so choose! They’re ooey gooey and taste like a cross between a brownie and a chocolate loaf!

If you know me, you know that my fave type of dessert is one loaded with CHOCOLATE 🤤 In my humble opinion, the more chocolate the merrier!

These double chocolate chip cookie bars have a chocolate base and are then topped with even MORE chocolate. What could be better right?? They’re soft, SUPER FUDGY & gooey, and sooooo good.

These originally started out as cookies but the batter was too tacky to roll them into cookies. My mind immediately went out brownies and then to BARS! By making these in a loaf pan, you can get super thick and fudgy pieces of cookie! It truly changes the game. I feel like I need to test out a brownies recipe in there.

However, it is important to note that because they are denser, you need to keep them in the oven for longer to make sure the center is cooked!

When you first take them out of the oven they will be very soft and gooey so be mindful to WAIT. If you’re like me and don’t have the patience to wait, try extra hard this time LOL. I actually waited a good 5 or 8 minutes before I cut into them!

Double Chocolate Chip Cookie Bars Ingredients

  • eggs
  • coconut oil
  • butter (or ghee to make it dairy-free)
  • vanilla extract
  • almond flour (I ALWAYS use Bob’s Red Mill)
  • coconut flour (Bob’s Red Mill for the win)
  • baking soda
  • cocoa powder (This is the one I use)
  • coconut sugar
  • chocolate chips

TIPS

  • I would use a banana loaf pan for these to make them come extra thick and even gooier!
  • The more chocolate the merrier!! (Believe me, I piled it on!!)

Favorite Baking Tools

Something that will make baking a little bit easier for you is having the right tools to bake! Below are some of the tools I use to make my recipes here at the Clean Eater!

  • Different size mixing bowls. These bowls are good to have to place your dry ingredients and your wet ingredients! Also, they are dishwasher safe which makes them that much more awesome!
  • Cooling Rack. A cooling rack allows your loafs, muffins, or these double chocolate chip cookie bars to cool without it sticking to your counter
  • Loaf Pan. Get a sturdy loaf pan that will hold up throughout all of your baking!

That’s it! After you’ve got these tools you need to make these cookie bars! When you are making these healthy double chocolate cookie bars, feel free to put your own twist on them!

Paleo Double Chocolate Chip Cookie Bars

Ingredients

  • 2 eggs
  • 1/4 cup coconut oil
  • 1/4 cup butter substitute with ghee to make it dairy-free
  • 1 tsp vanilla
  • 1/2 cup coconut sugar
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 1/4 cup chocolate morsels

Instructions

  • Preheat your oven to 350F. In a small bowl melt your butter in the microwave and set aside to cool
  • In a medium bowl add your eggs, coconut oil, coconut sugar, and vanilla. Mix together with a mixer or a spoon.
  • Once the butter is cool, add it to your liquid mixture. Stir.
  • Next combine your flours, cocoa powder, & baking soda.
  • Lastly, toss in your chocolate morsels and mix in well!
  • Line a small loaf pan with parchment paper and pour your mixture into the pan. Smooth out with a spatula. Top with more chocolate chunks for good measure! 😉
  • Place in the oven and bake for 20-25 minutes (mine were good at 24 minutes)
  • Let it cool for about 15 -20 minutes! It will be fudgy and gooey btw!!
