Coffee cake is my absluite favorite treat. I mean who can resist a cinnamon dessert AND a crumb topping?!? Certainly not me.

These bad boys are relatively simple to make but d require a few ingredients!

  • eggs
  • melted coconut oil
  • granola butter (can sub for nut butter)
  • vanilla extract
  • almond flour
  • coconut. sugar (can sub for keto sugar)
  • nutmeg
  • cinnamon
  • baking soda
  • salt

I love that these muffins are bursting with flavor while still being so healthy for you! They are low carb and can be made totally keto with the right sugar! In addition, they are totally gluten-free and made only with almond flour.

How should I store these muffins?

These Paleo Cinnamon Coffee Cake Muffins e can be stored on the counter at room temperature for a couple days, but it will stay fresh for longer if you put them in the refrigerator. You can also freeze half for later! When you’re ready to eat it, just let it defrost or heat it up in the toaster oven or microwave.

Paleo Coffee Cake Muffins

Ingredients

  • 2 eggs
  • 2 tbsp melted coconut oil
  • 1/4 cup granola butter
  • 1 tsp vanilla extract
  • 2 cups almond flour
  • 1/3 cup coconut sugar
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Crumble Topping

  • 1 tsp cinnamon
  • 1/2 cup almond flour
  • 1/3 cup coconut sugar
  • 3 tbsp coconut oil

Instructions

  • Preheat your oven to 350F.
  • In a medium bowl add your wet ingredients. Mix well.
  • Add in your cinnamon and nutmeg. Then add your flour, baking soda, and salt.
  • Pour your batter into your muffin tins and set aside.
  • In a small bowl make your muffin toppings and distribute evenly on each muffin.
