These paleo almond flour chocolate chip muffins are actually one of the best muffins I’ve made here at the Clean Eater. And, let me start by saying that I’ve made some great muffins — my Oatmeal Apple Muffins [Vegan, Sugar-Free], Banana Chocolate Chip Muffins [Vegan, GF], and my Vegan Chocolate Chip Oat Muffins!
These Paleo Chocolate Chip Muffins are dense and super soft and chewy. Oh, and they are super melty when hot. *DROOL* These muffins are made with whole ingredients such as almond flour, coconut sugar, and coconut oil.
How to Make Paleo Chocolate Chip Muffins
This batch of muffins is a simple breakfast treat that you can prep for the week! Let’s start by gathering all of your ingredients.
Ingredients
- Bob’s Red Mill Paleo Baking Powder
- baking soda
- salt
- eggs
- canola oil or coconut oil
- honey or maple syrup
- chocolate morsels (I used Choc-Zero)
* If you can’t find the paleo baking powder make sure you mix coconut flour and almond flour together!!
You can top the muffins with more chocolate OR top with sliced almonds for garnish if you’re not using the chocolate.
Also make sure to cool them on a wire rack for about 20 minutes, then remove and continue to cool or just dig right in. Often times I can BARELY wait to let my treats cool down before tasting them. OOPS. Guess you know one of my biggest flaws now!
How to Make These Muffins Without Eggs
To make 2 flaxseed eggs, combine 2 tbsp of flaxseed meal with 6 tbsp of water. Let the mixture sit for about 10 minutes and boom – you have your egg replacement.
Storage
These muffins will last in an air-tight container on your countertop for up to 5 days, however, you can store it in your fridge to keep it fresh for longer. )(Your freezer will work as well)
How Do I Make These Lower in Fat?
To make these chocolate chip muffins lower in fat, omit the coconut oil. Look at how wet your batter is and add a splash more almond milk if it feels too thick.

Paleo Chocolate Chip Muffins
Ingredients
- 3 cups Bob's Red Mill Paleo Baking Powder
- 1 tsp baking soda
- 1/2 tsp of salt
- 3 eggs
- 1/3 cup canola oil or coconut oil
- 3/4 cup honey or maple syrup (Choc-zero is a fave of mine)
- 1/3 cup of water
- 1/2-1 cup add-ins (chocolate morsels, walnuts)
Instructions
- Preheat oven to 350F
- Grease a standard muffin pan
- In a small bowl, combine flour, baking soda, and salt; set aside
- In a large bowl whisk together eggs, canola oil, honey or maple syrup, and water
- Add flour mixture and mix thoroughly
- Stir in add-ins
- Spoon batter into a greased muffin pan
- Bake for 18-20 minutes or until toothpick comes out clean
