Oatmeal Cookie Energy Balls Ingredients
This is one of my favorite easy snack recipes to make! They keep in the fridge for a few days and can easily count as dessert! Here is what you need to make Oatmeal Cookie Energy Balls:
- Rolled oats:
- Dates: this adds texture and sweetness
- Peanut butter:
- Maple Syrup:
- Cinnamon:
- Vanilla extract: this gives these energy bites the delicious cookie dough flavor.
- Salt
- Mini chocolate chips: If you want to keep this snack as healthy as possible, use dark chocolate mini chips!
Tips for These Energy Balls
- Use rolled oats instead of quick oats. They offer a a nice texture.
- Soft medjool dates are great for this recipe.
- You can use any type of nut butter. I love this recipe with peanut butter.
- Mini chocolate chips are preferable for this recipe!

Oatmeal Cookie Dough Balls
Ingredients
- 1.5 cups rolled oats
- 11 large medjool dates, pitted
- 1/2 cup peanut butter
- 3 tbsp maple syrup
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1/3 cup mini chocolate chips
Instructions
- Add rolled oats, pitted medjool dates, peanut butter, maple syrup, cinnamon, vanilla extract, and salt to a food processor. Process until a sticky, pinchable dough is formed.
- Transfer oatmeal cookie dough to a large bowl. Pour mini chocolate chips over the dough. Fold the chocolate chips into the dough.
- Use a cookie scoop or tablespoon to scoop the dough into 12 rounds. Roll the dough into evenly formed balls. Enjoy!
