No Bake Monster Cookie Bars
Ingredients
- 1 cup creamy peanut butter
- 1/2 cup honey
- 1 tsp vanilla extract
- 2 cups quick oats
- 3/4 cup mini chocolate chips
Instructions
- Line an 8×8 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
- In a mixing bowl, combine the peanut butter, honey, and vanilla extract. Microwave for 30 seconds and stir to combine.
- Stir in the oats, chocolate chips, and mini M&M's until everything is evenly combined.Press the mixture firmly into the prepared baking pan, smoothing out the top with a spatula.
- Chill the bars in the refrigerator for at least 1 hour, or until firm.
- Use the parchment paper to lift the bars out of the pan, and cut into squares.
- Store any leftovers in an airtight container in the refrigerator.
