  • Creamy peanut butter: My favorite brand is Smuckers
  • Honey
  • Vanilla extract
  • Quick-cooking oats
  • Mini chocolate chips
  • Mini m&ms

Variations for No Bake Monster Cookie Bars

  • Swap the nut butter: if you can’t have peanut butter, use your favorite nut butter like almond and cashew butter
  • Add an extract: my favorite is vanilla extract
  • Use other mini chips: you can use mini pb chips, butterscotch, or white chocolate chips

Tips and Tricks

  1. Use a microwave-safe bowl to melt the peanut butter, honey, and vanilla extract. This will make it easier to combine the ingredients and will help prevent burning.
  2. When stirring in the oats and chocolate chips, use a spatula to fold everything together gently. This will help ensure that everything is evenly distributed and prevent the ingredients from breaking or crumbling.

No Bake Monster Cookie Bars

Course: Breakfast, Dessert, Snack

Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 1 tsp vanilla extract
  • 2 cups quick oats
  • 3/4 cup mini chocolate chips

Instructions

  • Line an 8×8 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  • In a mixing bowl, combine the peanut butter, honey, and vanilla extract. Microwave for 30 seconds and stir to combine.
  • Stir in the oats, chocolate chips, and mini M&M's until everything is evenly combined.Press the mixture firmly into the prepared baking pan, smoothing out the top with a spatula.
  • Chill the bars in the refrigerator for at least 1 hour, or until firm.
  • Use the parchment paper to lift the bars out of the pan, and cut into squares.
  • Store any leftovers in an airtight container in the refrigerator.
