No-Bake Chocolate Coconut Bars
As you may have guessed these double chocolate coconut bars are made with lots of coconuts.
Growing up, I was NOT a fan of coconut. The smell was rather offensive to my nose, I didn’t like the texture or taste. It was just not my cup of tea.
Luckily, a few years ago I tested it out again and realized coconut actually is pretty awesome and I was missing out this whole time!!!
Also, let’s not forget there are SOOO many ways you can utilize coconut in your diet!! These no-bake chocolate coconut bars are proof that good things come from coconuts!
How to Make Chocolate Coconut Bars
The awesome thing about making these no-bake chocolate coconut bars is that they SUPER quick and simple to put together.
In order to make this dessert, you have to slowly melt the coconut oil if it isn’t already. After you do this step, it’s pretty quick and simple.
Make sure you have a medium-sized bowl on hand and combine your oil, honey, & shredded coconut.
Not only are these no-bake chocolate coconut bars made with shredded coconut , but (obviously) they taste similiar to an Almond Joy! I ain’t jokin. I did a double layer of chocolate just because I’m an addict, but you can totally just do one layer! These coconut bars are absolutely delicious either way.
No-Bake Chocolate Coconut Bars Ingredients
- coconut oil
- unsweetened shredded coconut
- honey
- semi-sweet chocolate morsels ( my top choice is Enjoy Life)

No-Bake Chocolate Coconut Bars
Ingredients
- 1/2 cup liquid coconut oil
- 2 cups unsweetened shredded coconut
- 1/4 cup honey
- 1.5 cups Nestle Tollhouse chocolate
Instructions
- Put the coconut oil, honey & shredded coconut in a large bowl and combine
- Transfer the coconut mixture into a parchment-lined 8 x8 baking pan. Refrigerate for about 10 mins.
- In a double boiler melt your chocolate chips
- Pour the chocolate over the coconut mixture and spread evenly
- Refrigerate for about 30 minutes
- Cut into squares and store in the refrigerator
