I have loved peanut butter for as long as I can remember! The funny thing is, I don’t remember when I first tried it or what I had it with that made me like it so much, but I knew that I could never get enough.
Whether it was eating peanut butter and jelly sandwiches for lunch (thank you mom😉), snacking on sliced apples and PB, or just eating it straight from the jar with my finger or a spoon of . my weapon of mass destruction, I’ve always liked peanut butter (full disclosure: I still do that now and I ain’t even sorry!!!!)
My love for peanut butter clearly started from a very young age and has undoubtedly followed me into adulthood.
Besides the fact that it’s DELICIOUS, PB holds another meaning for me. I love how versatile peanut butter is in any recipe. I love that there are soooo many different types of PB out there for me to choose from.
It’s an affordable, approachable, and protein-packed ingredient that is the perfect addition in any situation.Â
Because it is so simple to create recipes with peanut butter, I’ve been using them a bit more in my treats, ESPECIALLY if they’re paired with chocolate. Now, chocolate is a WHOLE other story that I can’t get into. But let’s just say, it’s another addiction I have. One that I cannot break up with 😅
ANYWHOOOOOOO, these No-BakeChocolate Covered PB Keto Bites hit the spot. They combine my two loves BUT with a little twist this time.
When I was about a junior in high school I discovered PB Fit. PBFit is a healthy alternative for traditional peanut butter. It has 87% less fat and 1/3 the calories of traditional peanut butter. Imagine snacking on peanut butter that is only 70 calories!! It’s pretty insane.
While I do love my natural creamy peanut butter, PBFit DOES come in handy from time to time.
For instance, since it’s in powder form I like to add it to my yogurt for flavor or even make a peanut butter drink that will be lighter on my stomach.
Since I was feeling something a little bit lighter, I decided to try a low-fat version of a PB treat! Either way, these No-Bake Chocolate Covered PB Keto Bites is the perfect dessert or snack to prep for the week and store in the freezer. That way you will have your peanut butter treats waiting for you when the cravings hit!

- 1/3 cup chocolate chips
- 1/2 tbsp coconut oil
Ingredients

- In a bowl mix your PB Fit with water until combined. The mixture should be of medium thickness. If it is too watery add more PB powder!
- Next, add in your vanilla extract and mix together
- Fold in almond flour and mix until thoroughly combined
- Form them into round cookies and place them on a baking sheet. Put them in the freezer to firm up for an hour.
- For the chocolate covering, melt chocolate and coconut oil together using a double boiler or microwave
- Once the cookies feel firm enough, coat each with melted chocolate
- Place back in the freezer until the chocolate hardens
- Store in the freezer for longer-lasting bites 🙂
