I wanted to make this granola bars healthy and super easy to make! For this no-bake energy bar recipe you will need

  • Rolled oats: use simple old-fashioned rolled oats
  • Natural peanut butter or almond butter
  • Honey: could also use maple syrup or brown rice syrup
  • Vanilla extract: just a hint for flavor
  • Mini chocolate chips
  • chia seeds

IF you use gluten-free oats or oats not processed in a facility with gluten, then yes!

Can these bars be vegan?

Yes! To make this vegan, use organic pure maple syrup instead of honey. Make sure it is not pancake syrup!

Can you freeze energy bars?

Yes, you can freeze these chocolate chip energy bars. Wrap each bar individually in plastic wrap and then place in a freezer bag. They can stay fresh for up to 1 month in the freezer.

Tips for Making Granola Bars

  • Using a mix of old fashioned and quick oats provides a great texture!
  • Feel free to play with the mix ins! You can add any dried fruit in this recipe, but you will want to dice larger pieces of fruit before stirring them into the energy bar mixture.
  • I like using all-natural nut butter for my chocolate chip granola bars because they don’t contain added oils and sugars. But you can use whatever you have on hand!

Chocolate Chip Granola Bars

Ingredients

  • 2/12 cups rolled oats
  • 3/4 cup runny natural peanut butter
  • 2/3 cup honey
  • 1 tsp vanilla extract
  • pinch of sea salt
  • 1/3 cup mini chocolate chips
  • 1 tbsp chia seeds

Instructions

  • Line the bottom of an 8 inch pan with parchment paper
  • In a medium bowl, mix all of your ingredients together. Pour into your pan and flatten with a spatula.
  • Place in the fridge to harden and then cut into rectangles
