No Bake Blueberry Cheesecake

If you love cheesecake but don’t want to go through the hassle of baking it AND refrigerating it before you can dig in, this No Bake Blueberry Cheesecake will be right up your alley. What makes this cheesecake so unique is that it sneaks in a small amount of cottage cheese for extra protein!

Now it may sound gross, but I’m telling you, you will NOT be able to tell that it is inside! All you have to do is make sure you cream your cottage cheese before adding to your batter. This ensures that you don’t see or taste the cottage cheese chunks in your cheesecake.

No Bake Blueberry Cheesecake Ingredients

  • Graham crackers: for a beautiful crust
  • Butter: necessary to hold your crust together
  • Sugar: but of course we need some sweetness!!
  • Cream cheese: a main ingredient in this recipe!
  • Cottage cheese: you can omit this, but if you want to sneak in some protein, TRY THIS. You will not taste it.
  • Cool whip: Adds such a great flavor to your no bake cheesecake
  • Vanilla extract: always need a splash of vanilla!
  • Powdered sugar:
  • Blueberries: get yourself some fresh blueberries and make this delicious topping!
  • Cornstarch: Helps thicken your blueberry mixture
  • Lemon Juice: Lends a perfect flavor to your blueberries

Homemade Blueberry Topping

While the graham crust and the cream cheese center are important, a good topping is a must! The homemade topping in this recipe is delicious and so dang easy to make. It takes just 5-10 minutes to make and uses fresh blueberries.

How to Store No Bake Blueberry Cheesecake

This cheesecake should be kept in the fridge so it does not spoil. It also will help it stay firm so it does not fall apart when you slice it.

Can you Freeze No Bake Cheesecake?

Yes you can freeze cheesecake! Make sure to wrap it up nicely to protect it from freezer burn. Just thaw it in the fridge overnight before enjoying.

No Bake Blueberry Cheesecake

Ingredients

Crust

  • 2 cups graham crackers
  • 1/2 cup melted butter
  • 2 tbsp sugar

Cheesecake Layer

  • 16 oz cream cheese
  • 1 cup cottage cheese
  • 1 container Cool Whip
  • 1 tsp vanilla extract
  • 1/4 cup powdered sugar

Blueberry Topping

  • 2 1/2 cups blueberries
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1 tbsp lemon juice
  • 1 1/2 tbsp cornstarch

Instructions

  • In a saucepan, add the blueberries, and other topping ingredients. Simmer on low heat for 5-10 minutes until they are thick and syrupy.* Remove from heat and let them cool. Once cooled, refrigerate until ready to use.
  • Line the bottom of a 9 inch springform pan with parchment paper.
  • In a large bowl, add the graham cracker crumbs, melted butter and sugar. Mix together. Press the graham crust mixture evenly onto the bottom of the pan and place in the fridge to chill.
  • In a large bowl, mix the softened cream cheese and cottage cheese until fluffy. Add the cool whip, sugar, and vanilla and mix until smooth. Spread evenly over the graham crust.
  • Top your cheesecake with the cooled blueberry topping and place back in the fridge. Chill for 3-4 hours before slicing and serving.
