PB Chocolate Keto Fat Bombs

DESSERT.

Two syllables and one delicious fat bomb later, I can confidently say that this is one of my favorite words in the English dictionary.

I def have a big sweet tooth. It’s crazy! After dinner, I’m always looking for something sweet to nibble on and my mind IMMEDIATELY goes to chocolate <3.

So one night while I was in my drunken chocolate state, I decided I would make myself Keto Fat Bombs.

But not just ANY fat bombs….no no! These were peanut butter chocolate fat bombs!

Are you drooling yet!?!? I def was when I was fantasizing about trying one of them.

Anywhoooo, this recipe is SUPER simple and quick!

You’re going to need 8oz of cream cheese for this (I have always Philadelphia cream cheese), so make sure you take yours out a little bit before making in order for it to be at room temperature! 🙂

You’ll also need some peanut butter, coconut oil, and dark chocolate chips! 

I typically use Viva Naturals Organic Extra Virgin Coconut Oil, but I recently just bought Vita Coco’s coconut oil. It’s 54 oz compared to Viva’s 10 oz one! Check it out and see what works best for you!

Once you have all of these ingredients with ya, make sure you have a medium sized mixing bowl to throw everything into!

Like I said, this is a super simple NO BAKE PB Chocolate Keto Fat Bomb recipe!

How do I get started??

Simply combine cream cheese, peanut butter, and 1/4 cup of coconut oil. Using a hand mixture, beat until combined (about 2 minutes).

Then place the bowl in the freezer for 20-25 minutes to firm up. I would check it at the 15-minute mark and see if it has hardened enough to roll into a ball. If it’s not ready, place back in the freezer for another 10 minutes or so.

Once the mixture has hardened, remove from the freezer and make golf sized balls.

At this point, you may or may not have taken a little chunk for tasting; experimental purposes of course 😉 

(Don’t worry I won’t tell) 

While you make those babies harden in the fridge for 5 minutes, its time for you to make the oh so wonderful chocolate drizzle.

  • 1/2 cup peanut butter
  • 1/4 cup coconut oil

  • 2 tbsp coconut flakes
  • 1 cup dark chocolate chips

Instructions
  1. Grab a medium sized bowl and combine cream cheese, peanut butter, and 1/4 cup of coconut oil.
  2. Using a hand mixer, beat your mixture until everything is fully combined!
  3. Place your bowl in the freezer to firm for about 20-25 minutes
  4. Check your mixture at the 15 minute mark to see if it is firm enough to roll into balls.
  5. Then roll your micture into golf sized balls and place into the fridge for 5 minutes. Let them harden.
  6. While your keto fat bombs are hardening, its time to make the chocolste drizzle!! Combine chocolate chips and reaminng coconut oil in a double boiler ( or microwave for 30 seconds). Drizzle chocolate over peanut butter balls!.
  7. Store in the refrigerator !
